Sweet Rolls

Ingredients

  • 1 qt. milk, scalded
  • 2 pkg. yeast
  • 1 c. shortening
  • pinch of nutmeg (⅛ tsp)
  • 1 c. sugar
  • ½ c. warm water
  • 1 Tbs. salt
  • 4 eggs
  • 1 tsp. vanilla
  • 2 cups mashed potatoes
  • 10-12 c. flour (make dough sticky)
  • 1 lb. raisins (optional)
  • cinnamon
  • brown sugar

Directions

Dissolve 2 packages yeast in ½ c. warm water and sprinkle a small amount of the sugar on top. Set aside. Mix scalded milk, shortening, sugar, salt, and nutmeg. Beat 4 eggs and add to mixture. Add yeast and water and mix. Mix in 1 tsp. vanilla. Add enough flour to make dough "sticky". If desired, add raisins. Let rise until dough doubles in size (2-2 ½ hours). Divide into 2 or 3 pieces. Roll each piece into a rectangle. Brush dough with melted butter. Sprinkle with cinnamon and brown sugar. Roll up and cut into rolls ¾ inch. Place in greased pan. Let rolls rise 1-1/2 hours. Bake at 400° for 12-15 minutes. Frost while warm.
