Carrot Cookies

Ingredients
- 1 c. shortening
- 2 tsp. grated orange rind
- 1 c. sugar
- 2 c. sifted flour
- 1 tsp. vanilla
- 2 tsp. baking powder
- 1 egg
- ¼ tsp. salt
- 1 c. finely grated raw carrots
Directions
Cream sugar and shortening. Add vanilla and egg and beat well. Stir in grated carrots and orange rind. Sift dry ingredients together twice and add. Drop by teaspoon on greased cookie sheets and bake at 350° for 20-25 minutes. Frost with orange frosting when warm.
