Carrot Pudding
Ingredients
- 1 c. grated carrots
- ½ tsp. salt
- 1 c. grated potatoes
- 1 tsp. cinnamon
- 1 c. bread crumbs
- 1 tsp. nutmeg
- 1 c. flour
- 1 tsp. vanilla
- 1 c. sugar
- 1 tsp. baking soda
- ½ c. oil
- 1 c. coarsely chopped walnuts
- 1 c. raisins
Directions
Mix all wet ingredients. Sift together all dry ingredients. Add the wet ingredients to the dry ingredients and mix well. Pour into greased cans or ramekins and cover air tight with foil. Place in shallow pan of water. Bake at 300° for 3 hours. (Don't take foil off before baking time is over. Add more water to pan if needed). Serve warm or cold with cream, lemon sauce or hard sauce.
