Lemon Meringue Pie

Ingredients

  • 1 c. sugar
  • 3 Tbs. cold water
  • 1 ½ c. water
  • 6 Tbs. lemon juice
  • 1 Tbs. butter
  • 1 tsp. grated lemon peel
  • ¼ c. cornstarch (maybe a little more)
  • 3 egg yolks beaten with 2 Tbs. milk

Directions

Combine sugar, water, and butter. Heat until sugar dissolves. Add cornstarch blended with cold water. Cook slowly until clear, about 8 minutes. Add lemon juice and peel. Cook 2 minutes. Slowly add egg yolks beaten with milk. Bring to boiling. Cool and pour into cooled baked shell.

Meringue

Ingredients

  • 3 egg whites
  • 1 tsp. lemon juice
  • 6 Tbs. sugar

Directions

Beat egg whites until stiff but not dry. Add sugar gradually one tablespoon at a time. Add lemon juice and spread over cooled filling sealing edges. Brown in moderate oven (350°) for 13 to 15 minutes until starts to brown.
