Oatmeal Cake

Ingredients

  • 1 ½ c. boiling water
  • 2 eggs
  • ½ c. butter
  • 2 tsp. vinegar
  • 1 ¼ c. oatmeal
  • 1 tsp. salt
  • 1 ½ c. flour
  • 1 tsp. cinnamon
  • 1 c. sugar
  • 1 tsp. baking soda
  • 1 c. brown sugar

Directions

Mix water, butter, and oatmeal. In a separtate bowl, mix the remainder of the ingredients. Mix the two mixtures and pour into greased 9x13 pan. Bake at 350 for 40 minutes.

Frosting

Ingredients

  • ¾ c. brown sugar
  • 1 c. walnuts
  • ⅓ c. butter
  • 2 c. coconut
  • ¼ c. evaporated milk

Directions

Mix all the ingredients. Spread over hot cake. Place cake back in oven under the broiler. Broil until coconut begins to brown and sugar melts and bubbles.
