Pumpkin Cake

Ingredients

  • 4 eggs
  • 2 tsp. cinnamon
  • 1⅔ c. sugar
  • 1 tsp. salt
  • 1 c. vegetable oil
  • 1 tsp. baking soda
  • 2 c. (1-15 oz. can) pumpkin, not pie filling
  • 2 c. flour
  • 2 tsp. baking powder

Directions

Mix eggs, sugar, and oil. Then add the remainder of the ingredients. Pour in greased and floured sheet cake pan. Bake at 350° for 25 minutes.

Cream Cheese Frosting

Ingredients

  • 4 oz. cream cheese, softened
  • 1 egg white
  • 1 stick butter, softened
  • 1 tsp. vanilla
  • 3 c. powdered sugar

Directions

Whip well. Frost cake when cool.
