Strawberry Pie

Ingredients

  • 2 c. strawberries
  • ¼ c. water
  • 1 c. sugar (You can use as little as ½ c.)
  • 1 t. lemon juice
  • 3 T. cornstarch (usually a bit more)
  • red food coloring
  • 1 pinch salt

Directions

Crush enough berries to make ¾ cup. Combine in pan sugar, cornstarch and salt. Add ¾ cup crushed berries, blending until smooth. Add water. Cook together stirring constantly until thick. Boil for 1 minute after it becomes thick. Remove from heat. Add 1 tsp. lemon juice, and the food coloring. Cool mixture. Slice strawberries into crust. Pour glaze over top. Top with whipping cream. Makes 1 pie.
