Beef With Snow Peas

Ingredients

  • ⅔ lb. beef flank steak or other tender beef
  • 2 c. cold water
  • ½ lb. fresh snow peas
  • 1 garlic clove, crushed
  • 2 c. boiling water

Marinade

Ingredients

  • 1 T. rice wine
  • 1 tsp. cornstarch
  • ½ tsp. minced fresh ginger root
  • 2 T. vegetable oil
  • 2 T. soy sauce
  • ½ tsp. baking soda
  • ¼ tsp. sugar

Seasoning Sauce

Ingredients

  • ¼ c. chicken broth
  • ¼ tsp. sugar
  • ½ tsp. cornstarch
  • ¼ tsp. salt
  • 2 T. water
  • 1 tsp. sesame oil
  • 1 T. soy sauce

Directions

Slice beef across grain at an angle in thin strips. Cut strips 2" long. Combine marinade, add beef, let stand 30 minutes. To blanch pea pods, plunge in 2 cups boiling water for 10 seconds then in 2 cups cold water. Heat 2-3 Tbs. oil in wok. Stir fry beef. Remove, draining well. There needs to be 2 Tbs. of oil in wok. heat to medium high. Fry garlic 10 seconds, then add peas and salt and stir fry 10 seconds. Remove from wok. Arrange on platter. Reduce heat to medium. Add 2 Tbs. oil and sauce to wok. Stir fry until sauce thickens slightly. Add beef. Mix well. Spoon over snow peas. Serve hot. Makes 4 servings.
