Chicken Casserole
Ingredients
- 4 cups chicken, cooked and diced
- 2 Tbs. lemon juice
- 2 c. cream of chicken soup
- 2 c. cooked rice (cooled)
- 1 ½ c. mayonnaise
- 1 c. sliced almonds or 2 c. Rice Krispies
- 2 c. celery, diced
- 1 stick butter or margarine
- 2 Tbs. onion, chopped
Directions
Mix chicken, soup, mayo, celery, onion, lemon juice, and rice in large greased casserole dish. Brown almonds or Rice Krispies in butter. Sprinkle evenly over casserole. Refrigerate overnight. Return to room temperature about an hour before baking. Bake at 350° for 50-60 minutes. Makes 8 cups, or six 1 ⅓ cup servings.
