Chicken Crepes
Ingredients
- 4 eggs
- 2 Tbs. butter, melted
- ½ c. milk
- ½ tsp. salt
- ½ c. chicken broth
- 1 c. flour
Directions
Beat eggs in a large bowl. Add milk, broth, butter, and salt. Gradually add flour. Let batter stand about 1 hour. Heat 6 inch skillet brush lightly with butter or oil. Put about 2 Tbs. batter in pan, tilting to cover bottom. Cook ½ minute, turn cook another ½ minute. Makes about 16.
Filling
Ingredients
- 2-3 c. cooked, diced chicken
- 1 c. sour cream
- 1 can (4 oz.) sliced mushrooms
- 1 c. grated Swiss cheese or Monterey jack
- 1 Tbs. instant minced onion
Directions
Mix all ingredients together. Fill each crepe with generous tablespoon of filling. Roll up. Put in (2) 9x13 pans.
Topping
Ingredients
- 1 can cream of chicken soup
- 1-2 c. cheddar cheese
- 1 c. sour cream
Directions
Mix soup and sour cream, spoon over crepes. Top with grated cheese. Cover with foil and bake at 350° for 25 minutes.
