Chicken Supreme Casserole

Ingredients

  • 5 lb. chicken
  • ¾ c. flour
  • 1 onion, chopped
  • 1 c. milk
  • 1 carrot, chopped
  • 4 c. chicken broth
  • 1 ½ loaves day old bread
  • 4 eggs
  • ½ c. butter
  • potato chips
  • 2 t. salt

Directions

Boil 5 lb. chicken with 1 chopped onion and 1 chopped carrot, salt to taste, and cook until meat drops off the bones. Cut into bite size pieces. Break 1 ½ loaves of day old bread into large bowl. Set aside. Melt ½ c. butter in skillet. Add 2 t. salt and ¾ c. flour. Mix well. Add 1 c. milk and 4 c. chicken broth , stirring and cooking until thick. Beat 4 eggs and add to gravy. Grease a casserole dish. Put the dressing in a bottom layer. Pour over it half the gravy. Sprinkle the chicken meat over the gravy and pour the rest of the gravy on top of the meat. Put potato chips over top. Put in oven for ½ hour.
