Marinated Chicken

Ingredients

  • ½ c. vegetable oil
  • 2 Tbs. prepared mustard
  • ¼ c. soy sauce
  • 1 tsp. minced garlic
  • ¼ c. lemon juice
  • 1 chicken, cut up

Directions

Mix all ingredients except chicken in a large, shallow dish or Ziploc bag. Add chicken; turn to coat. Cover and refrigerate at least 4 hours or overnight, turning chicken occasionally. Remove chicken and reserve marinade. Broil skin side down (or grill skin side up) 5-6 inches from heat source for 25 minutes, brushing chicken twice with marinade. Turn, cook 15-20 minutes longer, basting twice, until juices run clear when chicken is pierced.
