Porcupine Meatballs

Ingredients

  • 1 egg, beaten
  • 1 lb. ground beef
  • 1 (10 ¾ oz.) can condensed tomato soup
  • 1 tsp. Worcestershire sauce
  • ¼ c. long grain rice
  • ½ tsp. salt
  • 2 T. finely chopped onion
  • ⅛ tsp. pepper
  • 1 T. snipped parsley

Directions

Combine egg and ¼ cup of soup. Stir in uncooked rice, onion, parsley, ½ tsp. salt, and ⅛ tsp. pepper. Add ground beef; mix well. Shape into 1 inch meatballs and place in skillet. Combine remaining soup, Worcestershire sauce and ½ c. water; add to skillet. Bring to boiling, reduce heat. Cover and simmer 35-40 minutes, stirring often. Makes 4 servings.
