Chicken Salad

Ingredients

  • 6 c. cooked chicken, cubed
  • 3 c. mayonnaise
  • 6 Tbs. green onions, minced
  • 1 c. almonds, slivered
  • 2 ½ tsp. salt
  • 3 Tbs. fresh lemon juice
  • ¼ tsp. pepper
  • 3 c. elbow macaroni, uncooked
  • 3 c. seedless green grapes, halved
  • 1 c. whipping cream
  • 3 c. celery, finely diced

Directions

In a medium sized bowl combine: chicken, lemon onions, salt, and pepper. Mix well and refrigerate at least 2 hours. Add grapes, celery, mayonnaise, and almonds. Mix and return to refrigerator. Cook macaroni in salted water until tender; rinse well with cold water. Stir in macaroni with cold chicken mixture. Whip cream (sweeten a little) until stiff and fold with chicken mixture.
