Chunky Artichoke Salsa

Ingredients

  • 1 jar (6.5 oz.) marinated artichoke hearts, undrained
  • 3 medium plum tomatoes, diced
  • 1 garlic clove, pressed
  • ¼ c. pitted ripe olives, chopped
  • 2 Tbs. snipped fresh basil leaves
  • 2 Tbs. red onion, chopped
  • * Salt and ground black pepper

Directions

Drain marinade from artichokes into a bowl. Chop artichokes, black olives, and red onion. Dice tomatoes. Place vegetables into marinade. Add garlic and basil and mix gently. Season to taste with salt and black pepper.
