Salsa

Ingredients

  • 3 yellow jalapenos
  • ¾ c. brown sugar
  • 3 green jalapenos
  • 2 c. vinegar
  • 16 c. chopped, peeled tomatoes
  • 1 can (7 oz.) chilies
  • 3 large onions
  • 1 Tbs. salt
  • 1-3 green bell peppers
  • 1 tsp. pepper

Directions

Wash and dry chilies (wear gloves). Remove seeds and discard. Chop chilies. In large kettle combine tomatoes with jalapenos, peppers, onions, sugar, vinegar, chilies, salt, and pepper; boil. Reduce heat; simmer 2 ½-3 hours until desired thickness, stirring occasionally. Spoon into jar leaving ½" space. Wipe tops. Process 20 minutes. Makes 8-10 pints.
