Salsa

Ingredients
- 3 yellow jalapenos
- ¾ c. brown sugar
- 3 green jalapenos
- 2 c. vinegar
- 16 c. chopped, peeled tomatoes
- 1 can (7 oz.) chilies
- 3 large onions
- 1 Tbs. salt
- 1-3 green bell peppers
- 1 tsp. pepper
Directions
Wash and dry chilies (wear gloves). Remove seeds and discard. Chop chilies. In large kettle combine tomatoes with jalapenos, peppers, onions, sugar, vinegar, chilies, salt, and pepper; boil. Reduce heat; simmer 2 ½-3 hours until desired thickness, stirring occasionally. Spoon into jar leaving ½" space. Wipe tops. Process 20 minutes. Makes 8-10 pints.
