Chili

Ingredients

  • 1 lb. lean ground beef
  • ¼ tsp. coriander
  • 1 clove garlic, minced (about 1 tsp.)
  • 1 tsp. cumin
  • 1 large onion, finely chopped (about 1 c.)
  • ¼ tsp. coriander
  • 1 medium green pepper, finely chopped (about ⅔ c.)
  • 1 tsp. cumin
  • ½ tsp. salt
  • 2-4 Tbs. chili powder or less
  • 2 c. (16 oz.) can crushed tomatoes
  • 1 Tbs. cider vinegar
  • 1 (16 oz.) can kidney beans with liquid
  • ¼ tsp. allspice

Directions

Cook beef, garlic, onion, and green pepper over stove. Add remaining ingredients and bring to a boil. Simmer 45 minutes. For beanless chili, substitute beans with an extra 1 lb. of ground beef, plus an additional ¼ tsp. salt. Makes 7 (7 ½ oz.) servings.
